Hang Chat Spotlight: PaPan

May I present a new section of our blog, Hang Chat Spotlight, where we’ll give you a peek into our daily lives by introducing someone very special to us. Today I’d like you to meet PaPan (Aunt Pahn).

PaPan is one of the sweetest people you could ever meet. She runs a restaurant in a garage out of her home and makes our favorite Thai food, khao soi. It’s so delicious, in fact, that it’s the only thing she serves at lunchtime (and a daily dessert). But how can this be?! A restaurant that only serves one thing?!?! Well, my friends, her khao soi is the best…and everyone in Hang Chat knows it. Jack and I love it so much, we eat there 2-3 times per week. And at about $1 a bowl, we’re not breaking the bank.

This delectable dish is made with boiled egg noodles in a red curry sauce topped with coconut milk, fresh cilantro and spices, and fried egg noodles. It’s served with raw shallots, fresh lime, pickled cabbage, and chili oil on the side. You can order it with chicken legs or pork balls, but we pass on those.

Khao soi originates from Burma and is also served in northern Lao (albeit a different version). Apparently, the  Thai version has been influenced by Chinese Muslim cuisine.

Not only do we love PaPan because she keeps our bellies full with incredible food, but she is always happy to see us. We don’t have a whole lot we can talk to her about since our Thai is so limited, but our friend PiiLaan tells us she likes us anyway. Thanks, PaPan!
